That may be taking it a bit too far... but they were quite good. :)
4 pork chops, boneless (I like using the skinny little ones)
3-4 Tbsp. brown sugar
2 tsp. salt
2 tsp. black pepper
2 tsp. paprika
1 tsp. onion powder
2 Tbsp. butter
2 cups chicken broth
1 Tbsp. Worcestershire sauce
2 tsp. liquid smoke
Mix the spices and brown sugar together and press into both sides of the pork chops. Set Instant Pot on Sauce and add 1 Tbsp. butter. Once hot, add the pork chops and brown on both sides very briefly. Remove chops and set aside. Press cancel.
Add the chicken broth and use a spoon to scrape up the browned bits on the bottom of the pan. Add the Worcestershire sauce and liquid smoke, then add pork chops into the liquid.
Secure the lid, make sure the vent is set to sealing, and pressure cook for 4-7 minutes (depending upon the thickness of your chops). When done, allow pressure to fully release naturally for 12 minutes. You may then quick release any remaining pressure. Remove lid and pork chops. Let them sit for about 5 minutes before serving.
I served this with the Crispy Brussels sprouts and Sweet Potatoes - very nice.
