Cook sausage and set aside (cut up into bite size pieces). Cook two eggs in skillet - break the yolks but you don't scramble them. Put flour tortilla in skillet and cover with cheese. Then layer on the sausage and egg, followed by a bit more cheese and some seasoning (PC Southwest seasoning is perfect - can also use Everything Bagel seasoning) Cover with top flour tortilla and cook until browned and cheese is melty. Flip and repeat. :) Yum!!!!

Jonathan's Curry
Jonathan was whipping up his supper the other night and it smelled so good! When he brought it to me to offer me a taste I asked him immediately for his recipe. Here it is!
Jonathan's Curry
Chop up an onion and saute in olive oil. Add some chicken (he used chicken breast tenderloins this time around) and garlic powder (could totally use fresh garlic but didn't have any). Saute till close to cooked through. Add some curry powder and paprika (he thinks he probably used about a 2 to 1 ratio on that but he isn't sure). Then some half and half. (bet you could use coconut milk, too). Not sure how much half and half he used but I would say it looks like about ½ cup to ¾ cup. Serve over rice.
This was for one BIG serving for him only. SO DELICIOUS! Better than my restuarant version yesterday! This kid can cook!

First Mav and I stopped by Grandpa Jack's house for a bit. Mav was excited to show him his toy bison. :)
Then, of all days... we have been begging for rain but really didn't want it on THIS day when Jackson had just cut the field and they were trying to hay it. Rain wasn't expected but here it comes! Mav wanted to swim and we decided to go out for a bit, but were keeping a very close eye on the sky and the radar.

Storms were getting closer - we were keeping a close eye on things to know when we should get out of the pool.
Okay guys... it's time to get out...

June projects around WCR

Marvin and Jonathan were bailing the last of the pool water out with buckets. That beautiful rain we had made the unevenness under the pool even worse. The pool was sinking on that side even more. It was the right decision to begin again, but there is so much frustration with this whole process this time. I feel for my guys who have been trying to navigate the challenges.
Tomorrow they will rent a tamper machine and try to add more of the fill rock and then tamp the heck out of it to get the whole site firm and level.

4:40 pm and the ladies are here and we were watching with gratitude and admiration from the patio. Jonathan got the steps finished up and safe enough for us to climb up to the deck level and get into the pool. Safe enough for the night! :)

The guys were back at it this morning. Jonathan and Marvin got the whole pool dismantled and moved off site.
The guys rented a tamper for 24 hours to work on the pool site. They also used Jeremy's transit level.
June 6
More work on the pool site. The fellas are my heroes for seeing this through. This was never supposed to be the pool site and they have started at less than zero to get to this point. I deeply appreciate them.
The re-assembly of the pool begins. Jonathan had to use the shop-vac to clean up all the dirt and debris that had settled in.

Jonathan and Marvin laying out the base for the pool deck. They are going to make it extra deep since we can't go down the slides as originally planned. (at least not this summer)
They were really under the gun. I had a few friends coming to hang out in the pool with me on the following day. I realized at this point that there was no way the deck could be finished in time - even though Marvin was determined to make it happen. So I rescheduled the pool date. This dear sweet man worked so unbelievably hard to make it all work out well. I am so thankful for him.

Marvin was working on the deck railing. He used hog panels, which at first I was not real sure about. :D But they look fantastic! And they don't block my view.

I'm a little late in taking this final photo - but doesn't it all look nice? There are still a few things to finish up (adding a bin to store my floats) but I love the way the deck looks and those solar caps on the posts. I'm so thankful for Marvin and Jonathan and Jackson and all the work they put into this. It no longer feels like a 'cursed pool'.
