Cheesy Taco Skillet


Lots of good veggies in there!
Cheesy Taco Skillet
1 pound ground beef
1 onion, diced
1 bell pepper, diced
12 oz. can diced tomatoes with green chilis
1 large zucchini, diced
2 Tbsp. taco seasoning
3 cups greens (like kale, spinach, whatever you have)
1½ cups shredded cheddar jack cheese
½ container cottage cheese (optional)
green onions to garnish

Brown the beef and onion in a large skillet.  Drain off any fat.  Add in the vegetables and cook until they are all browned.  Add the canned tomatoes, taco seasoning, and any water needed for the seasoning.  Add greens and cook just enough to allow them to wilt.  Mix well and serve.  You can serve plain, over tortilla chips, in a corn or flour tortilla, or on salad greens.
