This is an old favorite recipe. We like it the best on the grill, but have been known to make this in the oven in winter. Either way, just be sure to coat the inside of your foil packet with oil or cooking spray to prevent sticking.
Cube up potatoes. Toss them with your choice of onions, red and/or green peppers, etc. Add a few Tbsp. of butter. Sprinkle liberally with salt, pepper and garlic powder. Spray foil then lay the veggie mixture in the center of a large sheet of foil. Fold up the side to create a packet. Be sure to seal the edges to keep in the heat and prevent leaking. Then grill for about 45 minutes to an hour (turning packet over once during cooking time) or bake for about 1 hour at 375 degrees.
