Sourdough Biscuits
1 cup flour
½ tsp. salt
½ tsp. baking soda
2 tsp. baking powder
6 Tbsp. cold butter, cut into small pieces
1 cup cold unfed sourdough starter
Preheat oven to 425 degrees.
Whisk together the flour, salt, baking soda, and baking powder. Cut the butter into the flour mixture using a pastry blender or a fork until you have a course mixture with tiny pieces of butter. Add in the sourdough starter and mix with a spoon until most of the flour is incorporated. Knead the mixture in the bowl a few times until it comes together. Turn out the dough onto a lightly floured work surface then roll or pat the dough to about ¾ inch thick. Cut the biscuits any way you like. Place the biscuits on an ungreased cookie sheet, placing them fairly close together. Bake at 425 for 12-15 minutes until they are browned around the edges.
