Pulled Pork (IP)


This is the Perfected Pulled Pork recipe for the Instant Pot from Bob Warden.  I have one of his pressure cooker cookbooks and it is a good one.  We made this for one of the big family meals leading up to the family reunion.

Perfected Pulled Pork in the Instant Pot
1 (4-5 pound) pork shoulder or butt
2 Tbsp. brown sugar
2 tsp. paprika
1 Tbsp. chili powder
2 tsp. salt
1 tsp. pepper
1 tsp. dry mustard
1 Tbsp. vegetable oil
1 ½ cups chicken stock or broth
2 Tbsp. cider vinegar
2 tsp. liquid smoke
1 (16 oz) bottle prepared BBQ sauce of your choice

I cut the pork roast into large slices (2-3 inches thick).  Combine all seasonings to make a rub then rub into the surface of all the pieces of pork.  Push Saute and add oil to heat until sizzling.  Place the rubbed pork in the Instant Pot and brown on all sides.  Add the chicken broth, vinegar, and liquid smoke to the Instant Pot.  Cancel Saute and place lid on IP.  Be sure the vent is closed to seal.  Set on Manual High or Meat for 100 minutes. 

After the IP has beeped that cooking is finished, allow for 15 minutes natural pressure release, then quick release any remaining pressure.  Remove pork from the cooking liquid and shred.  Drain the liquid from the pot and return meat to pot.  Pour in your bottle of BBQ sauce and stir to mix.  You can leave the pot on 'Keep Warm' while serving.
