Wrapping up July

We sure have been busy the last couple weeks of July.  I will have several blog posts coming up about all kinds of things, but here is one final 'wrap-up' post for the month.  I just don't want to forget anything; even the 'little' things are special to me when I re-read them years later.  :)

Mama, Daddy, Uncle Charles, and Aunt Ilene took a 3 day riverboat cruise on the Mississippi in mid-July.  They had a wonderful time together.  Here are a few of Daddy's photos from the trip.

Bacon Wrapped Honey Mustard Chicken

My sister-in-law, Candace, posted this recipe on Facebook a couple weeks ago, and it looked so good I just had to try it.  It WAS good!  Thank you, Candace!!



Bacon Wrapped Honey Mustard Chicken 
4 chicken breast filets (4 oz. each)
8 slices of thin bacon
kosher salt and cracked black pepper to season
3 Tbsp. honey
2 Tbsp. whole grain mustard
juice of ½ lemon
foil

Serves 4

Line a rimmed baking sheet with foil and spray a little cooking spray.  Set aside.  Preheat oven to 425 degrees.  Season chicken breast filets with salt and pepper.  Wrap bacon fairly tightly around the chicken, going from end to end.  Place finished chicken on prepared baking sheet.  

In a small bowl, mix together the mustard, honey, and lemon juice.  Brush half of the marinade over the top of the chicken.  Bake for 13-15 minutes until the bacon begins to brown.  Turn chicken over.  Brush with the last half of the marinade and bake for another 13-15 minutes.

It is well...

What a difficult weekend for so many in our community with the loss of 3 wonderful people within 2 short days.  One was my Bible study sister, Taira, who passed away unexpectedly yesterday following a heart attack.  I have known her since we were very little girls and was so happy to have the chance to reconnect with her this past year through our small group.

As I sat in church this morning listening to the music selections, I had to smile, even through tears at times.  So many of the songs seemed perfectly chosen for this trying weekend.  'In the Garden' is a long time family favorite hymn, and as the bell choir performed it I heard the words in my head... What a beautiful picture of our loving Father.

"And he walks with me and he talks with me,
and he tells me I am his own.
And the joy we share as we tarry there
none other has ever known."  

Then they played 'Jesus Loves Me'.  A perfect reminder of Taira's loving influence on so many young children over the years through her daycare. 

"Jesus loves me, this I know
for the Bible tells me so.
Little ones to Him belong,
They are weak but He is strong.
Yes, Jesus loves me!
Yes, Jesus loves me!
Yes, Jesus loves me!
The Bible tells me so."

'It is Well With My Soul' is another dearly loved hymn.  Today the lyrics caused me to think of Taira and the quiet yet faithful way she approached her days.  Regardless of the situation, she truly seemed resolved to just calmly and quietly press ahead.  Whether it be peace or sorrow... she just pressed on.

"When peace like a river attendeth my way,
When sorrows like sea billows roll;
Whatever my lot, Thou hast taught me to say,
It is well, it is well, with my soul."

As we sang 'Just a Closer Walk With Thee', I thought of the suddenness of Taira's death.  So often, we assume we can know how long we might have with friends and loved ones.  We can never know.  But, though unexpected, I know Taira was prepared and ready.  

"When my feeble life is over,
Time for me will be no more;
Guide me gently, safely over
To Thy kingdom shore, to Thy shore.
Just a closer walk with Thee,
Grant it, Jesus, is my plea.
Daily walking close to Thee,
Let it be, dear Lord, let it be."

Ending with 'To God be the Glory' was truly a gift.  A precious reminder of the glory ahead.  A glory that Taira now knows.

"Great things He has taught us, great things He has done,
And great our rejoicing through Jesus the Son;
But purer and higher and greater will be
Our wonder, our transport, when Jesus we see.
Praise the Lord, Praise the Lord
Let the earth hear His voice!

Please keep not only Taira's family in your prayers (including her parents, sister, husband, 2 children and 1 precious grand baby), but also the families of Gary S. and John D.  There is much sorrow in our community this weekend.  May we reach out to others with love and compassion as we hold onto the hope that is in Jesus.

Von's Pulled Pork!

I had been searching around for a good pulled pork recipe.  Von offered to not only tell me a recipe, but to bring a big batch of it to the potluck so that we could all try some!  It was YUMMY!  Thanks so very much to Von for sharing this wonderful recipe!

Von's Pulled Pork



Von smoked the pork all day long - until it just fell apart into a wonderfully moist mess of meat!

Recipe for the sauce
1 Tbsp. butter
1 small onion, finely chopped
1 clove garlic, finely chopped
¾ cup firmly packed brown sugar
¾ cup vinegar (cider vinegar is preferred)
1 Tbsp. Louisiana hot sauce
1 cup dijon mustard

Cook onion and garlic in butter until soft.  Add everything else plus ½ cup water.  Simmer until thick.  Serve at room temperature.

Airsoft


Both boys love airsoft!  The other day I happened to look out on the back patio to find them preparing their airsoft guns for an upcoming battle-game.  I can remember them looking like this many years ago... side by side working on some project or scheme.  It made me smile to see it once again.  I know the time is very short now for these kinds of opportunities.






And I am busted... Jackson sees me taking their photos through the door.

Snickerdoodles


Jackson had requested that I make Snickerdoodles soon.  The potluck seemed like a perfect opportunity.  Cookies are hard to beat!


Snickerdoodles
1 cup shortening (I use Butter flavor Crisco)
1 ½ cups sugar
2 eggs
Beat above ingredients together.  

Sift together…
2 ¾ cups flour
2 tsp. cream of tartar
1 tsp. baking soda
½ tsp. salt

Add sifted dry ingredients to bowl with sugar/shortening mixture.  Blend together.  Chill dough.  When dough is cold and workable, make small balls then roll in cinnamon/sugar mixture.  (2 Tbsp. sugar to 2 tsp. cinnamon.)

Lay out on cookie sheet.  Slightly press down on cookie balls then bake at 375 degrees for about 10 minutes.




Made me laugh... this was the day before the big airsoft battle.
We don't usually have both cookies and guns on our dining table.  :)

Summer Potluck

As we were preparing for our annual summer potluck we kept a close eye on the weather.  After the many storms we have had recently, we were a bit concerned when the weekend forecast called for possible rain and storms.  Friday morning we made the decision to go ahead with our scheduled Saturday event.  The horribly high humidity made the hot temperatures feel even hotter as we scurried around cleaning, cooking, and prepping.  And then, around 4:00 pm Saturday, a Tornado Watch was issued for our area.  "Are you kidding me??", we thought!  :)  But, all went well and though it stayed hot and humid, a nice breeze kicked in and all storms slid north of us.  We enjoyed an evening with good friends, tasty food, and beautiful skies.

The only downside, and boy was it a downside, was that there turned out to be a wasp nest hidden in the top of the big green slide on the playset.  :(  We just felt horrible that two kids were stung!!  Thankfully, both were okay and we had a nurse and also a pharmacy tech in attendance at the potluck.  Both of those wonderful ladies immediately jumped in to help care for the stings by slathering baking soda paste all over them.  Thankfully, the kids were back to playing soon (a big serving of chocolate cake helped at least one of them!) and Jackson was able to get into the slide to kill the wasps.  Whew.  Not the memory I want kids to be making at our home.  :(

One very special surprise came near the end of the evening.  As I was talking with folks I happened to look up just in time to see Victor arrive!!  I had felt just awful because Victor's going away party had been scheduled (unbeknownst to me) for the very same evening and time at another location in town.  I hated that we couldn't get out there to wish Victor well as he returns home to France after spending the last year here in our town as part of the Rotary student exchange program.  I was SO glad that Tyler brought him out to see us and give us a chance to say good-bye!!  It just made my night!  We have certainly enjoyed getting to know this fine young man over the past year.
