Creamed Chard




Yum!!!

Creamed Swiss Chard
2 Tbsp. butter
2 Tbsp. olive oil
1 Tbsp. minced garlic
½ small onion, diced
1 bunch Swiss Chard leaves, coarsely chopped
¼ cup flour (or you can use corn starch mixed with a bit of milk to thicken)
1 ½ cups whole milk or half & half
¼ tsp. ground nutmeg
salt and pepper to taste

Melt butter and olive oil in skillet over medium high heat.  Stir in the garlic and onion and cook for a few minutes until fragrant and the onion is getting translucent.  Add the chard and stir around until it begins to wilt.  Sprinkle with flour, stir and cook for about 1 minute.  Pour the milk over all and stir to thicken.  Season with nutmeg, salt, and pepper to taste.  You can also sprinkle in some shredded Parmesan cheese if you like.
