Sesame Shrimp and Zucchini Stir Fry

Sesame Shrimp and Zucchini Stir Fry
2 Tbsp. avocado oil, divided
1½ pounds medium raw shrimp, peeled and deveined
¼ cup soy sauce (or liquid aminos or coconut aminos)
¼ cup broth or stock
1½ Tbsp. corn starch
1 Tbsp. honey or maple syrup
2 tsp. sesame oil
1 Tbsp. fresh minced garlic
1 Tbsp. fresh minced ginger
2 medium large zucchini, sliced into ¼ inch thick half moons - skin on
2 tsp. sesame seeds
2 green onions, sliced

In a large bowl, whisk the soy sauce, broth, cornstarch, honey, sesame oil, garlic, and ginger. This is the stir fry sauce. 

In a large skillet over medium heat, heat avocado oil then cook shrimp until they turn pink and opaque in the center and are nicely browned on outside.  Then quickly transfer them to the bowl with the stir fry sauce. In that same hot skillet, add the remaining 1 Tbsp. avocado oil and stir fry the zucchini for 2-3 minutes.  Return the cooked shrimp and sauce to the pan and allow to heat through till sauce is bubbly and thickened - about 2-3 minutes. Garnish with sesame seeds and green onions and serve over rice. 





Sheet Pan Ginger Soy Glazed Salmon

Sheet Pan Ginger Soy Glazed Salmon
24 oz. salmon (use frozen/thawed salmon fillets or fresh salmon)
1 pound green beans
2 cups carrots, sliced (I used baby carrots)
Optional - I added some broccoli and brussels sprouts, as well
1 Tbsp. olive oil
salt and pepper to taste

Ginger Soy Glaze
¼ cup soy sauce
2 Tbsp. sweet chili sauce
1 Tbsp. honey
1 Tbsp. grated ginger
2 cloves garlic, minced
1 Tbsp. chopped green onions

Preheat oven to 400 degrees.  

Place salmon (skin side down) and all veggies in a single layer on baking sheet(s). Drizzle with olive oil and sprinkle with salt and pepper to taste.  

In a small bowl, whisk together soy sauce, sweet chili sauce, honey, ginger, garlic, and green onions.  Spoon sauce over the salmon fillets and bake in the oven for 8-10 minutes.  Turn on broiler and finish cooking for 2-3 minutes until the edges of the salmon are crisp.

Jackson, Brianna and Maverick were leaving this morning to head to Alaina's wedding in Ohio, but we watched Mav for a few hours while they finished getting ready to head out.  They were pulling the camper for this trip so there was a lot to do to get ready.

So our microwave door basically fell off... out of the blue.  That meant we were in the (immediate) market for a new microwave.  I looked at all the microwaves available in Kirksville and every single one was only 1000 watts.  The one we are replacing was 1400 watts.   I finally decided 1000 watts must be okay since ALL were the same.  Nope... 1000 watts is way less powerful.  :( Takes more time, by a lot and a pot pie actually said to NOT cook in a microwave under 1100 watts!  What is the deal???  I hate that every single time we get a new appliance, I like it way less than the one it replaces.  ONLY exception has been my beloved Speed Queen washing machine!  Okay, end of whine...

well, it is pretty - even it doesn't cook worth a darn

Air Fryer Roasted Potatoes

I make these all the time.  The air fryer is the perfect method to have crispy on the outside and so smooth and buttery on the inside baby potatoes.  Below is the quick and easy method that works every single time.

I use those bags of baby potatoes.  I like to mix up the yellow, red, etc.  Cut them into similar sized pieces (at least cut them in half).  Toss with olive oil and seasonings of your choice.  This time I used seasoned salt, garlic powder and onion powder.  You can use anything you like.  Roast them in the air fryer for about 18 minutes at 400.  Be sure to toss them around periodically.  And adjust the time to fit what you are cooking.  I just stick stuff in there and check then adjust cooking time.  I do like to use Roast for these rather than Air Fry.

Sheet Pan Sausage Dinner

Sept. 2022

Sheet pan sausage dinner (kind of like ratatouille but without eggplant)

Added cabbage and orange pepper.  Didn't have eggplant.  Was okay, but not nearly as good as my honey garlic one with broccoli and potatoes.  But this one is healthier!  Also added a bit of rosemary, crushed in my hands.  And some garlic salt and dried shallots and a bit of pepper.
