Dub's Turnip Casserole

Long time family friend, Glen N. (nicknamed Dub), brought this delectable dish to our Christmas party last year.  It was a hit of the party!  We ended up making it several more times over the holidays for our own family.  Uncle Charles, who also grew up with Glen, made it for Guys Weekend, as well.  Always a yummy recipe!!



Dub's Turnip Casserole
4 cups diced peeled turnips
2 cups water
1 tsp. sugar
2 Tbsp. butter
3 Tbsp. all purpose flour
¾ tsp. salt
1 ½ cups milk
¼ cup crushed cornflakes
1 cup grated cheddar cheese
chopped fresh parsley, optional

Place the turnips, water, and sugar in a saucepan; simmer for 5-8 minutes or until tender.  Drain and set aside.  In another saucepan, melt butter; stir in flour and salt.  Gradually add milk; bring to a boil.  Cook and stir for 1-2 minutes.  Stir in turnips.  Pour into a greased 1 quart baking dish; sprinkle with crushed cornflakes.  Bake, uncovered, at 350 degrees for 20 minutes or until bubbly.  Garnish with parsley if desired.  **Add the grated cheddar cheese to the top during the last 10 minutes of baking time.
