This was good, and certainly an easy crock pot meal, but it needed a little extra flavor. Will try to 'gussy it up' next time.
32 ounces chicken (breasts or thighs or mixture)
1 bottle (18 oz) BBQ sauce
1 can (20 oz) pineapple chunks, undrained
1 medium green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
Hot cooked rice
Place ½ of the chicken in bottom of crock pot. Combine the BBQ sauce, pineapple (with juice), green pepper, onion and garlic. Pour half over chicken. Then repeat with the other half of chicken and the sauce. Cover and cook on low for about 5 hours or until the temperature reaches 165 degrees. You may thicken the sauce with a little corn starch slurry. Serve over rice.
