Deb's Tomato Mozzarella Salad

This is one of my favorite summer salads, ever!  Thanks to Deb (again!) for such a tasty recipe!  One of the perks of this recipe is that you can take your time and make it a truly 'wow' looking dish OR you can make a few simple adjustments and throw together a quick and easy version.  Both taste fabulous!  I'll share two photos below and you can decide who made the 'WOW' version and who made the 'quick and easy' version, Deb or me.   :D

Tomato Mozzarella Salad
4 medium tomatoes
8 oz. fresh (soft) mozzarella cheese
1 cucumber (optional)
1/3 cup Newman's Own Lite Balsamic Vinegar dressing  (or a balsamic vinegar dressing of your choice)


Slice the tomatoes into half moon slices.  Slice the fresh mozzarella (oval) into half moon slices.  If using a cucumber, peel and slice into half moon slices.  Lay alternating pieces of tomato and cheese (and cucumber, if using) in serving bowl. Drizzle all with the balsamic dressing.  You just want to coat the tomatoes and cheese, you don't want it dripping in dressing.  Serve with a slotted spoon.

Quick and Easy Method
2 packages of cherry tomatoes
1 package of fresh mozzarella pearls
1/3 cup Newman's Own Lite Balsamic Vinegar dressing (or just enough to coat the tomatoes and cheese)

Slice cherry tomatoes and place in serving bowl.  Add the mozzarella pearls (separated).  Add dressing and toss to coat.
Note - you can adjust the ratio of tomatoes to cheese any way you like.


**Updated in 2022 with a new Balsamic glaze that I like to use.  Plus, I now add salt, pepper, garlic powder, onion powder... and anything that strikes my fancy.  :D
