Super Salad Blend

Took this blend and added some raisins, garbonzo beans (almost a full can but not quite), sunflower seeds, and made a cole slaw type sauce with mayo, white vinegar, splenda.  Then added a bit of store bought cole slaw sauce to finish it out. Very good.  I also added a bit more of the matchstick carrots.  Quite good and a bit different.

Mav was so interested in this caterpiller.  We talked about how it was going where it needed to go (he wanted to give it a ride in his little toy Gator)  :)  We watched it over about an hour (here and there) so he got to see the progress it made on the sidewalk.  Then we talked about how it would become a butterfly (or moth).  When Brianna arrived to pick him up she mentioned the book The Very Hungry Caterpiller and he definitely made that connection.  :)  Need to look up exactly what kind of caterpillar this is...

Healthy Ground Beef Casserole

We used bison meat - browned in a skillet.  Added some onion, chopped.  Then I added a bag of frozen cauliflower and let it get soft in there then chopped it with the mix n chop.  Also added what was leftover of a rectangle of cream cheese (about ⅔ of one).  Garlic powder, onion powder, some liquid aminos.  A good scoop of Beef Better Than Bouillon and some water (maybe ⅔ cup?)  Let that all sit a bit under lid.  Stirred all together, continued chopping cauliflower.  Added in frozen bags of green beans, rainbow chard, riced butternut squash.  Would have used any greens and would have used cubed squash... just used what I had on hand.  Could also change up the veggies you add here to whatever you like.  Then put lid on for a minute.  Then added some half and half - quite a bit - maybe 1 ½ cups?  And a bit more water as needed by visual.  Added about ½ cup shredded cheddar (what was left in the bag).  Stirred together and then poured in a pan and baked in the oven 25 minutes in heated 400 degree convection oven. Good but might need a tad bit more seasoning... not sure what.  More liquid aminos?  Some seas. salt?  Not sure...

Apple Dip

Such a quick and easy apple dip. Mav loves it and so do I!

Apple Dip

I mixed about ½ and ½ peanut butter and Two Good Vanilla Greek Yogurt. Then added a bit more yogurt. Added a drop or two of vanilla extract. Whipped with spoon. Served with apple wedges.

Mav helped me put some pieces on the puzzle.  :)  LOVE!

Mav was enjoying these pull back cars.  You pull back on them (with a little downward pressure) then let them go and they roll on their own. It has been a bit of a learning curve but he has really gotten the hang of it!

Wednesday, Sept. 14

Mav has his 'routine'.  He likes to come to my computer desk and go through the drawers and do things with stuff he finds inside.  He always takes my glasses cleaner and wants to clean my glasses... or the computer desk, or me.  :D  ha!  Here he is spraying it right at me!  hahahah!

My microwave gave out unexpectedly so I sent the guys to town to get me a new one.  Mav enjoyed the unboxing and installation process once they were back home.

Mav watching as GranGran goes down to tell the gravel truck guy where to dump the load of gravel we ordered - for the culdesac at the new barn. (we finally took down the construction stickers so he could see out the window well)  :)

Poor Mav was getting sick and I even ended up taking him to the doctor this very afternoon.  So no more photos from this day.  :(
