Family Christmas


We had our family Christmas a couple days early this year.  It was great because we were able to celebrate with everyone present, even though this wasn't the 'year' to have all of 'Generation 3' here for Christmas.  Once again, we had a full back porch of people at Grandma and Grandpa's house.  :)

Holly's Egg Roll Casserole

My friend Holly first posted this recipe about a year ago and I have been thinking about it ever since!  I finally made it and it was indeed yummy!  So much so that I didn't even get a photo before it was gone.  :D

(And thanks to Holly for texting me the ingredients again while I was at the store doing my grocery shopping!!)

Egg Roll Casserole
1-2 rolls Jimmy Dean sausage
1 pkg. broccoli slaw
1-2 pkg. pre-cut cole slaw
½ cup low sodium soy sauce
squirt of siracha
2-3 Tbsp. brown spicy mustard
½ bottle sweet and sour sauce
ginger to taste
garlic powder to taste

Brown the sausage then add in all the rest of the ingredients.  You can cook this in a crock pot or in a pot on the stove.  Garnish with wonton strips found in salad dressing aisle.

Broccoli and Cheese Soup (IP)


This was one of the first things I made in my Instant Pot.  I never got it posted here and even though I have made it several times, I still have never gotten a photo.  :D  This soup is a winner!

Broccoli and Cheese Soup in the Instant Pot
2 Tbsp. butter
1 yellow onion, diced
1 large bunch of broccoli (florets) or you can use a bag of frozen broccoli
1 cup shredded carrots
4 cups chicken broth
¼ tsp. garlic powder
¼ tsp. onion powder
1 cup half and half
1 ¼ cups shredded sharp cheddar cheese
salt and pepper
a pinch of nutmeg (optional)

Heat butter on Saute until melted and sizzling.  Add onion and saute until translucent, about 3-4 minutes.  Add broccoli florets, carrots, chicken stock, garlic powder and onion powder.  Select Cancel/Keep Warm.  Securely lock the pressure cooker lid, set vent to seal,  and select Manual for 3 minutes on High.  Perform a quick release to the pressure.  Stir in the half & half and the cheddar cheese.  Add salt and pepper to taste.  If you need to put the lid back on to let the ingredients settle together a bit, you may do so.  But you shouldn't need to cook at pressure any longer.

Our first family dinner of the season

We had a lot of family dinners over the holidays!  We enjoyed seeing many friends and family members throughout the entire holiday season.  Here are some photos from the first of those gatherings.  It was great to see Don and Evelyn, Juan, and Robert & Dahlia's family from Houston.  A full house!

James and Robert are old Marine buddies and we enjoyed getting to know Robert & Dahlia and their family - Olivia, Ava, Athena, Robbie, and baby James (named for our James!)  :D

Pressure Cooker Beef and Broccoli (IP)



Pressure Cooker Beef & Broccoli (in the Instant Pot)
1 ½ pounds boneless beef chuck roast, well trimmed and sliced into thin strips (I have used round steak, too)
salt and pepper
2 tsp. olive oil
1 medium onion, finely chopped
4 cloves garlic, minced
¾ cup beef broth
½ cup soy sauce (low sodium is best)
⅓ cup brown sugar
2 Tbsp. sesame oil
⅛ tsp. red pepper flakes (more or less to taste)
1 pound broccoli florets
3 Tbsp. water
3 Tbsp. cornstarch

Season beef with salt and pepper.  Put olive oil in the pressure cooker pot and select saute.  When oil begins to sizzle, brown meat in batches until all meat is browned.  Do not crowd.  Transfer meat to a plate when browned.  

When all meat has been browned and removed from pot, continue with Saute and add chopped onion to the pot.  Saute for 1-2 minutes until onion starts to soften.  Add garlic and saute for 1 minute more.  

Add beef broth, soy sauce, brown sugar, sesame oil, and red pepper flakes to the pot.  Stir until sugar is dissolved.  Add browned beef and any accumulated juices.  Select Cancel/Keep Warm.  Then select Manual High Pressure.  Set timer for 10 minutes.  

Microwave or steam broccoli for 2-3 minutes or until tender.  (Or you can simply add the broccoli to the cooked beef in the pot when it is done, letting the heat steam it.  I would put the lid on during this time to keep heat in.)

When beep sounds on pressure cooker, allow 10 minutes NPR (natural pressure release).  Then release any remaining pressure.  Remove the lid.  

In a cup combine cornstarch and water; stir until smooth.  Add to pressure cooker and stir well to combine.  Select Saute and stir until sauce comes to a boil and thickens.  Add steamed broccoli.  Serve over hot, cooked rice.  (if you have two pressure cookers or 2 inner pots you can make the rice in your pressure cooker, as well!)
