Anna's Cranberry Orange Scones



My dear niece, Anna, made these yummy scones for the Christmas party back in December.  She promised to share the recipe with me and here it is!!

Easy Cranberry Orange Scones
INGREDIENTS:  
2 sticks of butter, cold from the fridge
1  1/2 cups dried cranberries
1/2 cup milk
1/2 cup sour cream
2 cups flour, 
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon table salt
2 tablespoons orange zest

DIRECTIONS:
1. In a medium sized mixing bowl add flour, sugar, baking powder, soda, salt, and lemon zest.

2.  Cut butter into thin slices with a knife and toss into the flour mixture, squishing between fingers until it is coated and mixed thoroughly  throughout, and becomes crumbly.

3.  Add milk and sour cream; mix with a wooden spoon or a rubber spatula until it becomes doughy and can be rolled into a ball.

4 .  With rubber spatula, transfer dough to liberally floured work surface.  With floured hands, knead dough 6 to 8 times, until it just holds together in ragged ball.  Place in the freezer for about 5-10 minutes to chill.

5. Once the dough is chilled, transfer dough to floured work surface and sprinkle the dried cranberries onto the dough and knead them in, until it the cranberries are evenly dispersed throughout the dough. 


6. Roll dough, pressing to form tight rectangular log. Then press into a rectangle about 1/2 inch thick.  Using a sharp knife, cut rectangle lengthwise into 2 rectangles. Cut out triangular shapes and place on a greased cookie sheet.

7. Bake at 400* or until tops and bottoms are golden brown, 10-15 minutes. Brush tops with melted butter and sprinkle with course granulated sugar.

Visiting houses

Following our 'field trip day' of visiting architectural landmarks in our area, Rojina and I spent two more days visiting the homes of friends.  Again, what a treat to be able to see such different examples of American home design.

First up was a visit to Susan's house.  Her home is such a great example of mid-century design.  Plus, it showcases Susan's impeccable style throughout the house.  Rojina loved hearing all the stories behind various antiques and special pieces that Susan has in her home.




We all laughed near the end of the tour when the doorbell rang and it was Kelly dropping by to say hi!  She had known we would be there and saw my car as she drove by, so popped in.  We asked her to take our photo.   :)

The next day we visited two more homes.  First was the home of dear Chris.  She graciously showed us all around their house, which they just purchased and moved in to early last fall.  Rojina loved the two story fireplace in the living room!  After the tour we visited for awhile in front of the cozy kitchen fireplace where Heidi (their little doggie) decided that Rojina was a great new friend.  :)

Then we headed to Kelly's house.  Kelly's home holds a lot of memories for me, as well, since it is the Truman State University President's house.  Daddy and Mama lived there from 1994 to 2003 and we made many happy family memories within those walls.

These ladies are all so gracious and kind.  We appreciate their generous hospitality in opening their homes for us to come and visit.  What a special treat for Rojina (and for me to tag along!!)  Thank you so much to Susan, Chris, and Kelly!  You are indeed special friends.

Touring with Rojina

Last week I had the great privilege of accompanying Rojina as she visited several places around town, primarily looking at the architecture.  Since she has her architectural degree from Nepal she has been quite interested in American architecture.  Our first stop was to visit the Round Barn.  Judy was so hospitable and generous, even letting Rojina see the paperwork that was involved in designating not only the round barn, but the entire property, as an historic site.  How wonderful!

After spending quite a lot of time exploring the Round Barn and property, we headed back to town for a mini tour of area churches.  There is quite a variety of architectural church styles even in our small town.  We noted some of the things that remain constant with church architecture, as well as some of the differences.  Jeremy even took time out of his day to give us a full tour of their church, which Rojina really enjoyed.  Again, thank you to Jeremy!

Crock Pot Ham, Green Beans, and Potatoes

This turned out to be a really yummy dinner.  Super easy and surprisingly tasty.  We will definitely have this again.





Crock Pot Ham, Green Beans, and Potatoes
2 pounds fresh green beans, rinsed and trimmed  (I actually used canned because that was what I had.  It worked out fine.)
1 large onion, chopped
3 ham hocks  (I used a bunch of leftover ham and some ham broth that I had from a meal earlier in the week.)
1 ½ pounds new potatoes, quartered.  (I just used regular old russets because again, that is what I had on hand.)
water  (a few cups to help cover potatoes)
1 tsp. garlic powder
1 tsp. onion powder
1 Tbsp. chicken bouillon granules  (I actually used a heaping tablespoonful of Better Than Bouillon Ham base)
ground black pepper to taste

Note - if using fresh green beans you will need to cook them longer in the crock pot.  If using canned green beans you can add everything together at the same time.

Place canned green beans, onion, ham, potatoes and water in slow cooker.  Add seasonings and stir to mix.  Cook for 2-3 hours on High.

Also note - I typically cook any crock pot recipe in my Pampered Chef stoneware covered set.  I just put all ingredients in, cover, and cook in oven on 350 for a couple of hours.  (see photo below)

Misc January


Just a random grouping of things I have missed here on the blog in January.


This month we have had several stunning sunsets.   (say THAT 5 times fast!!)   Absolutely beautiful!





The night before his first day at KHS Jonathan (thankfully) caught sight of the label on the water bottles I had purchased for him.  He came to me and said, "Mom, are you TRYING to get me killed on my first day???"  Whoops!  :D




I received this photo from Deb last week.  So happy that dear Hannah was able to greet Aaron and family the morning of their tour of OU.  How fun!

While enjoying a wonderful Sunday lunch together we received a text from Kerry and Susanna stating they were enjoying attending the International Finals Rodeo!




We wished we could be with them, and sent them a photo in return.  Jackson wasn't waving in this first one...



...so we took a second!   It wasn't until we sent it that I realized Jonathan wasn't waving either!  But, he had a great big smile.  :)

Mama's Lemony Jello Salad


I love jello salads!!  My favorite is probably Summer Ginger Ale Salad.  But, this one is much simpler to put together and is SO yummy!  Mama often brings it to family meals.  Like this past Sunday!  Except I didn't think to get a photo until after we had all dug in.  Oh well.  :)



Mama's Lemony Jello Salad
2 lemon jellos
1 tall can of mandarin oranges, drained
1 large can of pineapple (save the liquid)

Basically, use enough hot water to add to the pineapple juice to be the correct amount of liquid for the 2 packages of lemon jello.  Dissolve jello in the water/juice combination.  Then quickly add the drained mandarin oranges and the drained pineapple.  Cover and chill to set - about 4 hours.

You can use pineapple chunks, chopped pineapple, or pineapple rings that you slice up.  Just remember to use the pineapple juice as part of the liquid to make the jello.

Jackson's old bedroom


When we first built this house the boys shared a bedroom and we had a dedicated guest room upstairs.

Goodness, those boys were cute!  Jonathan and Jackson in the old guest room.

However, Jackson eventually decided to move up there and re-do the room to suit him.  The first thing he did was paint over the beautiful burgundy walls with a desert camel color.   :)  Ah well.  It was a great guy room for him throughout his teen years.  (I have to tell you that I spent way too much time looking at the photos in that old 2007 post I linked earlier... my precious little boys are almost too much for this old heart.)  Here are three of those photos...

When Jackson moved out this fall we knew we wanted to paint it but were unsure what color to choose.  We seriously considered painting it that old burgundy color again, but both boys expressed their dismay at that choice... they even called it purple!  :)  That did get us to thinking, however, about new and different color choices.  Finally we decided on a rich blue called Liberty.  I really do love it!  The room is still a shambles... honestly, the entire upstairs is a shambles as we are doing some deep organizing, de-cluttering, and cleaning.  (why is it the cleaning and de-cluttering causes such a MESS???)   

However, you can at least see the color change and get the idea of what the room will be returning to. And, on that note, we are back in business with a dedicated guest room!  Come and visit!!  :)
