Eagles


Last week we made our annual trek to Canton to see the bald eagles.  This year Brianna was able to join us, which was lovely.  The weather was cold but party sunny and we had a nice drive over there.  As is our tradition, we went immediately to the riverfront park to see how many eagles we could spot.  While there were several eagles along the Mississippi River, there weren't too many in the trees above us.  :(  However, we spent some time admiring the river, ducks, seagulls and eagles.  I do love that riverfront park; with a view of the wildlife, the dam, and a ferry there is always something to enjoy.

We then drove through town to find our favorite house.  Over the years it has been undergoing renovation.  The boys call it the 'alien-ship house'.  Even the shrubbery in front is shaped to match the house!   :)




Then it was up the hill to the college campus to enjoy the view.  Culver-Stockton sure is a nice, little private college.  Too bad it is so expensive!!!  



Finally, we stopped at our favorite little buffet restaurant for lunch.  Following lunch we returned to the river to see the eagles again and were rewarded by finding three eagles in one of the trees by the road.

A very fun day spent together.  I surely don't take that for granted!  


Ranch Pork Chops


This recipe has been making the rounds on Facebook.  It really was super easy and very tasty.  Will definitely make again!

Crockpot Ranch Pork Chops
1 can cream of mushroom soup
1 packet of dry Ranch dressing mix (I used the buttermilk version)
pork chops

Place pork chops in slow cooker.  Cover with soup and sprinkle dressing mix over the top.  Cover and cook on High for 4 hours or on Low for 6 hours.  It makes lots of good 'gravy' as well.  

Note - I cooked these in my Pampered Chef stoneware combo.  I simply placed all ingredients in the combo then baked them at 250 degrees for about 5 hours.  We served with rice.

Jackson's birthday


Yesterday was Jackson's 18th birthday.  The day before yesterday I was working on rebuilding the old Archive blog and came to this post.  That sure made me feel nostalgic.  It was just a blink of an eye from this…

Although we are having our family celebration dinner this weekend, we were still able to celebrate with Jackson by going out to eat at Colton's Steakhouse.  We had a debate at the table about whether we should let the waitress know it was his birthday.  I was definitely in favor of the idea :) and did end up telling her.  I wanted to be sure he got the 'full Colton's birthday treatment' including the ringing of a cowbell and the shouting out of birthday greetings!  To my great joy, we discovered that not only had I told our waitress, but so had dear Erick, Trish and Victor who also happened to be eating at Colton's last evening.  :)  That is the beauty of a small town!!  Everyone has your back!!!   :)   ha!

One highlight of Jackson's day, for sure, was turning in coins at the bank.  He had saved up quite a few coins himself and we decided to let him have our coin jar, as well, as a birthday gift.  When we got them all sacked up we realized there was more there than we had thought - it weighed out at 24 pounds!!!   Still, my jaw dropped to the floor when the final tally at the bank came in at $230!!!!!!  Wowzer!!!!  I told him that he had a way happier birthday than I had intended!!!   :D  (Now to get to work filling that jar again for Jonathan's birthday in October!!)

Poor Brianna was sick yesterday so their celebratory plans were put on hold.  :(  Jackson ended up spending a good part of the day with her, helping nurse her back to health.   He joked, as he was applying Vicks VapoRub to her feet, that it wasn't exactly how he had envisioned spending his 18th birthday!  :)  But, he was happy just to be with Brianna - no matter the circumstances.   :)  Poor girl, sure hope she gets feeling better soon.  


January catch-up

So, I have missed most of January here on the blog.  I guess I could sum it up by saying 'cold, bitter temperatures', 'lovely dinners with friends and family', and 'blessings'.  But, here are a few photos and a quick run-down of the month.

We started the month (and the year!) with a blessing.  January 1st was not a good weather day with slick roads and cold temperatures.  Jackson and Brianna were traveling in to youth group from her house (on a winding, wooded highway) when a deer jumped out from the side of the highway and hit them.  Thankfully, Jackson didn't lose control of the truck and was able to stay on the road and not hit anything else.  Also thankfully, he was IN the truck instead of his car.  Because the roads and weather were bad we had told him to take the truck.  If they had been in the car I feel they could have been seriously hurt.  Thankfully, a ¾ ton truck was more protection for them.  Scary event, but grateful they were okay.  Trucks can be repaired.

We enjoyed a couple dinners with friends - one evening where I remembered to take photos and one evening where I forgot.  :(  Both evenings were a pleasure.  I wish I had gotten a photo of Chris and Cheryl (and boys) when they were here, but below are photos from Gary and Denese's visit.

We had exciting adventures picking up a ½ a beef from a new processor.  We usually buy our beef from people here in town, but had the opportunity to purchase a half beef with other friends - and it turns out their processor is about an hour away.  Marvin and I attempted to go pick it up one afternoon and had to turn around and come back home after only 15 miles because of the treacherously icy roads. The next day Daddy offered to go in his AWD to pick up the meat and we gratefully took him up on his offer.  Around 4:00 pm he called from a mechanic's shop and said that the slick roads were even worse over there.  Going into the processor's parking lot his car had slid into the end of a culvert that was totally snow and ice covered and it had slit his tire.  He also had no cell phone service, but luckily, there was one mechanic's shop in the town and he had gotten there.  The tire had to be ordered, however, and wouldn't be in until the next day.  As Jackson and I headed out to go get him we received text alerts of a new freezing rain warning.  I have to tell you that was a total white knuckle drive!  The roads were terrifying and the weather was bad and getting worse.  We finally arrived in the little town just to be stopped by a looonnnggggg train.  :)








We were sure glad to get to Daddy and then to get home again.  Poor man… doing a good deed for us sure cost him a lot!

About mid-month I received a surprise when someone called Jonathan one afternoon to inquire if I was in jail!?!?!?  What on earth????  They then shared that it had been in our local paper that I was arrested on a warrant for failure to appear in court on speeding and no valid license charges.  I honestly didn't believe them until they texted a photo of the notice from the newspaper!  Then I completely freaked out!  I live in a small town and knew that it was highly unlikely that there was a another person with my exact name (spelling and etc.) without me knowing about it.  I honestly began to worry about identity theft!  However, the notice did say the other 'me' was 40.  That should have been a dead giveaway to anyone who might have read it!  I am surely not 40!  :)  After doing a little digging I discovered that there is, indeed, another woman with my same name who has recently moved to our greater area (not my little town, but a town nearby).  I am seriously hoping she leads a much quieter life from here on out!  I am STILL hearing of folks who DO think it was me!!!   aaaarrrghhhh!!!

The weather for the entire month of January has just been difficult.  We have spent way too much time in negative temperatures.  That sure makes it hard to care for animals, especially.  Marvin has battled waterers freezing up, ice and snow storms, and frostbite.  One evening was particularly strange in that the day had been lovely and warm - into the upper 40's!!! - then out of literally NOWHERE a white out blizzard blew up.  In less than 5 minutes the wind and snow howled in and caught Marvin out in the field with the horses.  They all took refuge in a little 'run-in shed' together.  Thankfully, Marvin had his cell phone on him and was able to call me just as Jackson and I were getting ready to try to go find him.  He was able to ride it out in the shed while the horses sought comfort from him by burying their noses in his chest.  :)  Luckily, it was over almost as quickly as it began…. within 20 minutes.  But, that was about the freakiest weather I have ever witnessed!

Clearly, there was a front coming in… but we were surprised by the intensity of the blizzard just an hour later!

Then just this past Sunday evening we were enjoying dinner at Mama and Daddy's house with a family friend, Shana, when the winds blew up (about 60 mph we later learned) and the power went off.  We finished our meal by candlelight as we listened to the wind blow a gale.  The temperatures were dropping and we knew we were to get down into negative temps overnight.  I wimped out and accepted the lovely offer from friends to come spend the night at their house in town (where they still HAD electricity), while Marvin determined to stay home to watch over things.  Just as I had my bag packed (by flashlight) the power came back on.  Yay!  The obvious cliche is so true… you simply don't appreciate things like heat and lights until they are taken away.  Why is this (greater) message so easy to forget??

Corn and Black Bean Chicken


This was super easy to throw together.  I made it using my Pampered Chef stoneware combo, but it could definitely be a crockpot recipe.  I thought it was tasty and versatile in that it can be eaten alone (like a casserole), as a taco or burrito filling, or in a quesadilla.  You get some fiber with the black beans and brown rice and it is really quite filling.

Corn and Black Bean Chicken
6 Schwans chicken breast filets  (that equals about 24 oz. chicken breast)
1 can corn, drained
1 bag frozen Hy-Vee Baja roasted corn blend
1 can black beans, rinsed and drained
about 2 cups picante or salsa (more or less to taste)
about ¼ cup taco seasoning (more or less to taste)
2 cups dry brown minute rice
about 3 cups water  (check throughout cooking to see if you want to add more)
3 Tbsp. Italian dressing (I used Ken's Italian Dressing)
3 Tbsp. Ranch dressing (I used Pear Tree Ranch Dressing)

Place all ingredients in stoneware combo or crockpot.  Bake at 375 degrees for about 2 ½ to 3 hours (or set crockpot on low for about 6 hours).  Remove chicken and shred, then return to pan.  Add about 1 bag (2 cups) shredded cheese and stir to mix in.  Add water if needed.

Can serve alone as a casserole, as a dip with tortilla or pita chips, on a flour tortilla as a burrito, in a taco shell or as a taco salad, in a quesadilla…  I liked it plain but the fellas liked it with sour cream, lettuce, more cheese, etc. 



Uncle Charlie's fish fillets

My Aunt Aleta and Uncle Charlie live on the gulf coast and eat fish quite often.  Every time we are there Uncle Charlie fixes the most delectable fish for dinner.  Somehow, I can never quite replicate it here at home.  Could it have something to do with the fact that he gets his fish fresh in the gulf that day, while I buy my fish up here in the "seafood capital of a land-locked small midwestern town"??

Anyway, here is one of my favorites of his fish recipes.  Although not nearly as good as when he makes it, it was still tasty.  :)

Uncle Charlie's fish fillets
Poke little holes with a fork in fish fillet and sprinkle with lemon juice, salt & pepper.  Spread a thin layer of mayo on top.  (you can mix a little garlic or dill in with the mayo if you like.)  Chop fresh mushrooms and green onions then sprinkle on top of fillets and pat down.  Then add a mixture of shredded cheddar and shredded parmesan cheese.  Pat Italian bread crumbs on the very top.  (Uncle Charlie never uses measurements… he says just put the amount you want on each fillet!!)

Bake at 425 degrees in the oven for 20 minutes.  Or you may broil for a shorter time.  (I like to bake for about 15 minutes then finish under the broiler.)

I used Tilapia this time around.




Uncle Charlie is also known to simply marinate a fish fillet in Italian dressing then throw it on the grill.  That is super yummy!  I also like his breaded version… he takes a fish fillet and dips it in beaten egg, then rolls it in corn meal, flour, garlic, dill and any other seasonings he likes.  Then fry in oil in a pan or deep fryer.

Italian sausage pasta skillet

Italian Sausage Pasta Skillet
1 pound Italian sausage (can use Italian turkey sausage)
1 can diced tomatoes, Italian style  (can also use garlic & olive oil style, or other as you prefer)
1 chicken bouillon cube
8 oz. farfalle pasta, uncooked
2 cups water
1 tsp. Italian seasoning (optional)
1 pkg. (6 oz.) spinach leaves  (I used more… and I de-stemmed them)
½ cup shredded mozzarella cheese  (I used shredded mozzarella/provolone blend)


In skillet, cook sausage until crumbled and no longer pink.  (can also slice up hotdog style sausages)  Drain if needed.  Stir in undrained tomatoes, bouillon cube, pasta, seasoning and water.  Bring to a boil.  Reduce heat; cover and simmer for 15 minutes or until pasta is tender, stirring occasionally.  Add spinach; cook and stir until spinach wilts.  Sprinkle with cheese and serve.

Who we are

A friend asked in a comment for clarification on 'who we all are'.  I smiled at that request and realized it was a really good one.  We are quite a conglomeration of folks out here and I am sure it is hard (or almost impossible!) to keep it all straight.  So, here is a very quick rundown on how we all fit together.  The main thing is that we are all tied together by bonds of love.  Often, they are blood ties, but not always!  :)

This is where everything began.  Daddy and Mama on August 4, 1954.  Almost 60 wonderful years ago!  They are the absolute heart and soul and center of everything that has come since - and for that, we are all so grateful.
